Black Bean, Avocado and Corn Salad

There are a butt load of things that I am going to miss about this Summer.  
Despite all of the Wedding and Baby events, I think this has really been one of my favorite Summers in a long time!  Besides the obvious things i'll miss, like the 90 degree beach days, the bud light limes and sunburnt feet, I always miss fresh fruits and veggies!  

Anyone else!?

When labor day comes I can always be found in the produce aisle stuffing the last of the fresh fruits and veggies into my shopping cart, while wrestling the damn produce bags.

One of my favorite side dishes to make this summer was the ever famous 
Black Bean, Corn and Avocado Salad

If you've never made this before, you should start now, because you are certainly missing out!

2 Avocados
2 Limes
Fresh Cilantro
Black Beans

In a large bowl, mix the beans, avocado, corn, tomatoes and cilantro.
Next, add in some lime juice, salt and pepper to taste.
Refrigerate for 30 minutes!
(If you are impatient like me, you can just start eating!)
